No Bake Cookies

Here in the South it is HOT & HUMID (which makes me sticky and grumpy). I try my best to keep the AC on in increments of about 10-15 mins. 

Because of that, I'm not really thrilled to turn on the oven. Not when it already feels like it's baking in the house.

So I jumped on Pinterest to find a "no bake" solution to making cookies. I found a recipe that my baby girl and I loooove. The cookies didn't turn out super pretty, but they were pretty tasty :)


At first, I was like, Sweet...no bake. Just put all the ingredients together in a bowl and they magically turn into cookies. Not so. You still have to do a little baking, just not in the oven. I guess I can handle that.

Here's the recipe I pinned from Pinterest, taken from Lick the Bowl Good (She has amazing recipes, by the way)

No Bake Cookies
  • 2 cups sugar
  • 1 stick oleo, margarine or butter (I used butter)
  • 3 Tbsp. cocoa powder
  • 1/2 cup milk
  • 1/2 cup crunchy peanut butter
  • 1 tsp. vanilla extract
  • 3 cups oatmeal (old fashioned rolled oats, not instant)
Mix the sugar, butter, cocoa, and milk in a medium saucepan. Boil for 1 minute.
Add the peanut butter and vanilla. Mix quickly until peanut butter melts, then add the oatmeal and mix til well blended.
Drop spoonfuls on tin foil, wax paper or parchment. Allow to set and cool completely.
Makes 2 dozen 3 inch cookies.



They turned out delish! And they lasted FOREVER. Probably because I was eating them mostly by myself. With a little help from my almost 18-month-old.

    I just made these cookies! They are cooling right now as I type this.
    I changed a few things....to make them VEGAN ((:

    Sugar- I used splenda
    Butter- Upromise Vegan butter.
    Milk- SO Delicious coconut milk
    I did dip my finger in the bowl, and mmm mmm good! I just know they will be yummy! thank you for posting this easy recipe!
